Subject: Fruitcake
Ok, ok... I imagine there are enough fruitcake jokes out there to last a year but, i was wondering. Can the basic fruitcake recipe (if there is such a thing) be modified to be a heathful, storeable food product? I guess I'm thinking about how long they are supposed to last and how there are really only 25 fruitcakes in the world that just keep rotating from person to person. If they do have an excellent storage life and they were home baked and items such as nuts and perhaps seeds & raisens were used instead of all the weird stuff you find in them maybe it would be a good idea to have some on hand? Any thoughts on this?

Jo,
There is a website that deals with baking breads and cakes to store(as well as other things). I have copied a few of their recipes and they look pretty good. I did not look specifically for fruitcake because we don't like it. However, there is a lot of info. there and you might find what you are looking for there. The recipe calls for baking the cake in a canning jar and it will keep 6 months.

I found out about it somewhere in this (GN)forum and the person who wrote the post said he had tried it and it worked well.

I like the weird stuff. My favorite all time food it the SAFEWAY stores fruit cake. Full of chems but it sure tasts good. Fortunately I can't afford to buy it! I used to have the recipe, from a safeway baker years ago, but have since lost track of it. What a pity. I like healthy food too, but when it comes to desserts and holidays I say let it roll... not the fruit cake, the fun!
