When one of the cows gave birth to a new calf the milk was very yellow and nourishing. Since the little calf didn't need all the cow would give, Mother would milk the cow and bring the sticky yellow, thick milk into the house. She would then pour it into a large shallow pan and pop it into the hot oven. (Need I tell you how to get the oven hot, again?) The thick milk would bake into a custard and we would eat it with cream or some of the good Jersey milk. We could add cinnamon, which made it quite good. This is what she called CALF DANCE! |
