Mung Beans  

The mung bean is a very small, round bean closely related to the field pea. Here in the United States, mung beans are chiefly sprouted and are the main sprout here in grocery stores. Mung bean sprouts are characterized by their crisp, nutty flavor, ideal for stir fry and are also commonly eaten raw in salads. Mung beans are also used in Indian recipes skinned and split to make dal (sometimes written as dhaal, dhal or dhall.). The Sri Lankans use them to make idli. Split peas can also be substituted for this purpose. Mung beans are also considered low on the gas producing scale.

Ingredients:  Mung Beans.

Directions:   Mung beans are available as dried beans or as sprouts. Wash sprouts thoroughly before use. Beans do not need to be soaked before cooking. Whole beans cook in about an hour.  Mung beans can be eaten on their own, or combined with rice to make khichari, or combined with vegetables and greens to made hearty soups.  Turmeric, cumin, dried ginger, and coriander are some spices that work well with mung beans. 

For sprouting, soak 12 hours in water for initial start.  If beans are harder may use warm water-90degrees.  Drain off soak water entirely and then rinse with cool water-not cold water.  Drain. 
Repeat this process every 8 hours keeping in low light and room temperature for 2-3 days.  Sprouts are ready to harvest when 1/4 to 1/2 inch long sprouts appear.  Be sure to drain thoroughly in last step to minimize surface moisture.  Store in refrigerator.  The larger thicker sprouts require pressure method.
