The whole pea can be sprouted which increases it's sweetness, vitamins and enzymes. When dried peas are cooked, they seem to melt right into the liquid in which they are cooked. This is especially true of split peas that have their skins removed before they are split. Delicious in flavor, peas and split peas go well in soups and casseroles.

Ingredients: Whole green peas.
Directions: Best used for sprouting. May also be used in cooking. Rinse. For overnight soaking, cover each cup of peas with 3 cups water and let stand overnight or 12 hours. Rinse and cover with water. Bring to a boil and simmer about 1 hour. May use seasoned stock made from chicken, beef, ham or other meat. Chopped vegetables may be added if desired. Season as desired and serve.
